It is milled within one day of harvest to ensure maximum freshness, then cold pressed using one of the last stone mills in California.

The olives used in TDC Olive Oil are harvested at Bella Vista, a small, Certified Organic farm in Hollister, California. Bella Vista’s Tuscan varietals (Frantoio, Leccino, Pendolino, Maurino, and Taggiasca) produce a medium-intensity oil that is fruity and buttery, making it an ideal all-around cooking and finishing oil. The olives are also strategically harvested in late November or early December (producing a mellower flavor), with local family and friends of all ages working together to hand-pick the product and prep it for pressing.

At the end of each harvest day, the Bella Vista olives used in TDC Olive Oil are transported swiftly to the Mill at 43 Ranch in San Ardo, California. This certified, world-renowned miller uses state-of-the-art equipment for processing and extraction of the product. By cold pressing within 24 hours and warehousing in a climate-controlled dark room, the extra virgin olive oil is able to maintain its freshness and the full power of its flavors.

EVO I Can Trust
I love this olive oil. It is light and flavorful for salads and other vegetables while doing double duty as a wonderful cooking oil. If you know about the olive oil industry, you know about its checkered past and the unreliability of labeling. This is an organic extra virgin olive oil that I can trust. From grove to cold press to canning, the chain of custody is known. Any other olive oil is now a compromise.
